So we have a few Vegans in the office, and the rest of us may be a bit skeptical of this way of life. Who can live without dairy and meat? Well apparently a lot of people do, and they eat a variety of stuff! We stumbled upon a great article in the New York Times about a Vegan chef named Chloe Coscarelli. Chloe is only 22 years old and already making headlines after she won a cupcake competition on The Food Netowork's "Cupcake Wars". We are so intrigued by her winning cupcake recipe we might just have to try out some of these Vegan ways...

There are so many great summer foods to eat in this heat. Keri Glassman cooks up healthy recipes to keep you living a nutritious life. Her latest recipe, Cucumber Salad, is so good you have to try it.
Servings: 6
Prep Time: 10 minutes
Ingredients:
2 medium cucumbers
1 1/2 pints grape tomatoes, quartered
3 tablespoons rice vinegar
1/2 teaspoon salt (optional)
1 tablespoon freshly ground black pepper
2 teaspoons Herbes de Provence
1. Peel cucumbers in strips lengthwise, leaving 1/4 inch of the skin in between each strip. Dice cucumbers.
2. Place cucumbers and tomatoes in a large bowl.
3. Toss cucumbers and tomatoes with rice vinegar, salt (if using), black pepper, and herbs. Serve immediately
